Chocolate Cake Truffles

Assalamualaikum!

3 midterms down and two more to go!Phewwwww!Then we'll have a bake sale next Wednesday .Two assignments to hand in by the end of the month.Next month, I have another midterm and 3 term papers due. YEAY. Could you believe the amount of work they gave us?If you're a student you'd believe me.Not complaining,not complaining!=p

I'm the kind of person who could not handle stress gracefully. If I'm stressed out, I'd either be cleaning my apartment or trashing it. AND I'm also the kind of person, who wouldn't let go of an idea until i give it a try. Which is bad because I have a lot of more important things to do, yet my mind kept on bugging me with new or untried ideas.

Last week, I had my first midterm of Friday for this class called Animal Learning and Behavior which there was A LOT of memorization to be done.But nooooo, my mind kept on thinking about the chocolate cupcakes that I have in my fridge. Those who know me well, know that I don't really like to eat cupcakes or chocolate cakes.One slice is enough for me.But I have 10 extras in my fridge. Whaddoidooo??

Since my mind was racing from being too nervous to study (I'm weird like that) or wait..it could also be the coffee....I decided to breathe in and sit down and make cake pops.Did I tell you I have some chocolate cream cheese icing in my fridge?Yeah.So I have all I need to make cake balls.EXCEPT, the pops of course.I have coffee stirrers sticks in my kitchen.Trust me, use those to stir your coffees and don't bother sticking them up your rounded cake balls.Sorry I had to smile at the last part of the previous sentence.Jokes aside, the sticks weren't sturdy enough and the cake balls became a mess as they kept on moving left to right.But what do I do with the cake balls?I made them into cake truffles instead.Which is basically a cake coated in chocolate.How i wish I have white chocolate baking bars at home.But I don't.Next time then...

Chocolate Cake Truffles
10 chocolate cupcakes
1/2 cup of frosting of your choice

  1. Crumble the cupcakes in a large bowl. Such a good therapy!
  2. Add the frosting and mix until well incorporated.
  3. Shape them into small balls and place them on a lined cookie sheet.
  4. Refrigerate for 15-30 minutes to let the cake balls set.

Chocolate Coating 
1 packet of Hershey Semi Sweet Baking Bar (8oz)
2 tablespoon of shortening
  1. Using a double boiler, melt the chocolate.
  2. Once chocolate is melted, turn off the head and add in the shortening.
  3. Place into the chocolate in a deep bowl.

Submerge each cake balls in the melted chocolate mixture and place them back on the cookie sheet.
Refrigerate them to harden the coating.

I decorated mine with some pink colored buttercream icing:)

Peach Pie


Assalamualaikum!

Last time I went grocery shopping, I saw some peaches on sale. Thinking that I'd be to busy to bake anything I decided not to buy them. From then on, I kept on thinking about peaches! Peach tart, peaches pie, peach cobbler, peach in milk and syrup. Sigh.

I went to the grocery store again today and was determined to buy some peaches and make a peach pie. The best part is, the ice cream is also on sale! JACKPOT!!I made Peach Galette to be precise. Galette is a kind of freeform pie.:=)

This recipe is easy and delicious. Trust me, if it’s hard, I’d think twice to make it.

Peach Pie

1 sheet puff pastry, thawed
3 peaches peeled, pitted and diced
¼ cup sugar
1 tablespoon corn starch
1 large egg
1 tablespoon of vanilla extract

  1. Preheat the oven to 350 degree Fahrenheit
  2. In a bowl, pat the peaches dry using a kitchen towel
  3. Add in sugar, corn starch, vanilla and beaten egg. Mix well.
  4. Line a cookie sheet with parchment paper and place the puff pastry in the middle.
  5. Pour the peach mixture in the middle of the puff pastry. Leaving a 2.5 inch border to fold.
  6. Fold the edges in and brush some egg wash on the pastry.
  7. Bake for 20-25 minutes or until pastry is golden brown.
  8. Serve with ice cream.

Cut them into cubes 
Add sugar, corn starch, vanilla and egg

Store bought puff pastry.


Tuck those them nice and neat
